Choptank Oyster Company’s Kevin McClarren: When eating oysters, often people want something extra with some tang to it to give the oysters that extra little zing. A local chef, Paul Shiley, threw together this amazing sauce recipe. Paul worked at a waterfront restaurant we could see from the Choptank oyster farm. Unfortunately, that restaurant has since closed, and Paul has moved on. But his sauce recipe lives on when we do shucking events. Enjoy Shiley’s Own Oyster Sauce!  

Shiley’s Own Oyster Sauce

Serves:  can be dolloped atop approximately 4 dozen oysters

Ingredients:

  • 7 oz cup fresh Lime juice
  • 1 tsp finely diced garlic
  • 1 tsp finely diced shallot
  • 1 tsp finely grated ginger
  • 1 tsp chopped cilantro
  • i tbsp chopped mint
  • 1 tbsp chopped basil
  • 2 tbsp sugar
  • 1/2 cup water
  • 1/2 cup Thai fish sauce

Instructions:

  1. Mix up all ingredients.
  2. Shake.
  3. Serve over oysters, of course.
  4. Easy. Enjoy!
